Finally used my vintage Nordic Ware “Good Morning” rooster omelette pan. Found it at my local Goodwill for under $5.00 and clean up is a breeze thanks to the nonstick interior. The trick to using this pan is to cook the majority of your omelette on one side and then a smaller amount on the second side. This way, the side with the smaller amount will cook quicker creating a sort of “lid” that will fall atop the other side when the pan is shut.
I didn’t use any special recipe here, just sauteed some onions with butter and then used up whatever Egg Beaters we had on hand with real eggs. I am not kidding, I used about a cup of egg beaters and 8 eggs and I still could have added more eggs. Once the egg started to set, I grated some sharp cheddar and put that on one side (the side that had the most egg) and then flipped the lid shut. It worked really well!
