A short while ago when visiting the San Juan Islands of Washington State, we had the pleasure to dine at the Bay Cafe on Lopez Island.  It was here, where I had one of the best salads of all time called the Lopez Arugula Salad.  Owners, Tim and Kristin Shea shared their very simple recipe with me, so that I could pass it along to you ♥  Now bear with me, this salad recipe could very well be a fabulous find, and it is — but wait until you see what I have prepared it in :)

I knew straight away, the Lopez Arugula Salad would be the first salad to fill this marvelous bowl.  I honestly, truly, hopefully hope you will make this because quite frankly, it’s such a fresh and zippy salad that is quite delicious!  Here is the recipe:

The Bay Cafe
Lopez Arugula Salad
serves 8

  • 1 pound arugula
  • 4 teaspoons lemon juice
  • 1/4 cup extra virgin olive oil
  • 1/2 cup blanched Marcona almonds
  • 1/4 cup grated Parmesan cheese. divided
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Preheat your oven to 450 degrees.  Toast the almonds on a baking sheet until lightly browned, about 10 minutes.  Allow to cool and then roughly chop.

Toss the arugula in your salad bowl with the lemon juice, olive oil, salt, pepper and half of the Parmesan cheese.  Top with the remaining Parmesan cheese and chopped almonds.  Serve immediately.

  2. On a trip in our 25′ Silver Cloud to Southern Oregon. Camped the first night at Hiway Haven RV park. We usually stay at state parks but have fond memories of drive-in theaters and our first few dates so I picked this as the first night on the surprise birthday camping trip for my hubby. What a combo – a drive-in movie and camping! Anyway, perfect timing for a great salad recipe and it is Keto friendly so works with how we eat! Camped at Bullard’s Beach outside of Bandon by the Sea and if you haven’t been down here in a while, well worth the drive from Seattle. We found a market at the docks that opened five days ago and sells the owner’s fish he caught that day as well as grass-fed and finished pork and beef from local farms. There is also an artisan cheese producer in Bandon on Hwy 101 and picked up sun dried tomato cheese curds to accompany our applewood smoked olives marinated in Chardonnay and a nice Pinot Grigio on this rare warm day on the Oregon Coast. A Midwesterner by birth, the bounty of the PNW amazes me. Looking forward to ordering the Airstream cutting board and exploring your other fabulous finds!

    • Kathy, hello!! I was so excited to read your comment. I adore the salad for that very same reason — Keto friendly. I have actually as of two months ago began the keto lifestyle and am quite pleased with how I am feeling! More energy and happier all around. ALSO VERY IMPORTANT — THANK YOU for the heads up on Hiway Haven RV Park. This place sounds like too much fun!! This is absolutely on my list! Also on my list is Bullard’s beach and the artisan cheese producer on Hwy 101 in Bandon. I am pretty sure you have just created our next trip itinerary. THANK YOU FRIEND ♥♥♥

  4. Lovely pictures as usual. Have downloaded your recipe. Thanks. But, a little hard to read w/black background.

    We love arugula and will plan on buying some fresher when I go shopping on Wed. Hope I can find blanched Marcona almonds.
    Also, we like arugula, diced seedless watermelon, fresh parsley and feta cheese salads. Life is Good.
