road to Jackson Hole

The drive from Ketchum, Idaho to Jackson Hole, Wyoming was quite a long drive, but pleasant.  We enjoyed the big skies and puffy clouds as well as landscapes that seemed to go on forever.  We also spied some other Airstream’s during our trip which always ended in happy smiles and waves ♥

Along our route we came across many pull outs along the highway where we could stop and stretch our legs.

And also have lunch.

Like this Bison Burger we had alongside some greens tossed with sundried tomatoes dressed in a lemon-oil vinaigrette.

This recipe comes from a sweet little older lady I met at the Missoula, Montana farmers market not too long ago.  She was stocking up on Bison meat from a local rancher and I was so incredibly curious what she would use the meat for.  I asked and well, she shared this recipe for bison burgers with me :) ♥

During our visit in Jackson Hole we were invited to come and stay for a couple of nights at the Teton View Bed and Breakfast located right in between Jackson Hole and Teton Village.

Carol and Franz Kessler who run the Teton View B&B offered us a spot in their driveway to keep our Airstream while we visited with them.  We also spent a night at the Four Seasons Resort in Teton Village (that post coming soon) so it felt good knowing our Airstream was safe and sound at their home.

They are truly such special people to us and made us feel at home straight away.  They both have such amazing life stories from Franz growing up on ski’s (literally) in the Northern Alps of Austria to becoming a gourmet chef who was trained in Innsbruck, Austria (wow!) to sweet Carol who lived in Alaska for 17 years where she worked construction on the Alaska oil pipeline to production operator, outdoors, in the oil field for British Petroleum on the Arctic Ocean.  Incredible.

Incredible was also also a good way to describe our accommodations at the B&B as well as the breakfasts Franz and Carol whipped up.

Everything from scratch and absolutely delicious.

After a peaceful night of sleep we woke up (very) early to explore downtown Jackson.

Every minute of every day we had here was planned down to the hour.  We were busy!

But thankful in a way because since we were out so early, we felt like we had this sweet little town to ourselves . . .

It was eventually time to head over to Jackson Hole Wild Life Safari’s where we would be taken on a half day trip through Grand Teton National Park to view the sweeping landscapes and wildlife.

From the glorious sunrise in the early morning and blue skies came some unwelcome grey clouds in the far distance.  Then the rain came.

I was told by our guide that the views of the landscape are always changing due to the shifts in weather here.  Out of the blue can come a big dark storm and then the next minute the clouds part, the winds calm and beautiful blue skies appear.

Just like it happened to us on this day.

I will tell you that for the longest time I have been dreaming of photographing this barn.  I had visions of the clear blue skies and tall majestic peaks of the glorious Tetons towering over this old weathered barn with the sun shining just right.

But it seems Mother Nature had other plans for me that day I suppose.

Ah well.  The storms and clouds were quite interesting to watch and our guide told me, “Monica, do you know how many pictures are out there of this barn in the most perfect weather?  These shots you have taken, they are not like the others — they are so awesome!”

So then, I felt better.  I like a positive thinker like that :)

Our guide drove us all over the park showing us highlights and key points of interest – many of which I have photographed to show you.

For sure we would have never been able to cover this much ground in the amount of time it took for him to show us.

We felt very accomplished!

But next time, we will stay longer and explore more.

The following morning we woke up even earlier.

We took a hot air balloon ride and it was {LIFE} changing.

Bison Burgers

Ingredients

  • 1lb Ground Bison (or any other cut)
  • 1 egg
  • 1/4 cup Panko Bread Crumbs (or one slice of super soft white bread)
  • 1/2 cup Chopped Red Onion
  • Splash of Worcestershire
  • Splash of Milk (about 5 tablespoons) (The Panko will absorb the milk keeping the burger juicy. Mixture should be sticky.)
  • 1/2 teaspoon Garlic Powder
  • good pinch of salt and pepper

Directions

Step 1
Mix all ingredients except for your ground meat. Once everything is combined, add in your meat and shape into patties. Don't overwork the mixture -- just bring it all together.

Cook in a skillet over medium heat until done to your liking.

Add your salt at the end (I've learned adding salt to the mix before cooking draws out the moisture which ends up in your pan and not in the burger).

  1. Great recipe, I did put bacon on top of mine but the were actually pretty juicy.
