Early Saturday morning we packed up the truck, hitched up the Airstream and hit the road. Six hours later we arrived in Sandpoint, ID (from Seattle). Our campsite for the next ten days would be at the Bonner County Fairgrounds. I can see how in summer this place would be super busy! The amenities here included water and electrical for all sites. Two sites had full hookups (read: dump out) and those were #30 and #31. If you plan to come in summer, make sure to reserve either of those two spots. The bathroom and showers were immaculate and the grounds were well maintained. All in all we were quite happy with our spot here! Continue reading »

Japanese Potato Salad from my Airstream kitchen to yours

2014 is going to be a wonderful year — I can just feel it.

I’ve met some wonderful friends through J5MM over the last few years and for that very sole reason I am proud of this blog. But there are two people in particular that I absolutely can not wait to meet in person and it’s going to happen this year. We’ve been friends online now for a while — sharing stories of weekend adventures, Airstreams and best of all — the Japanese culture. Obviously I’m not Japanese but the culture has always fascinated me, so much in fact that at times in my life I have become quite absorbed in learning more about it. Fortunately for me, these sweet friends of mine have generously taken their time to carefully explain traditions as well as other things including the cuisine of the culture to me. It’s a tradition to celebrate Christmas Eve at my brick and mortar home and have the Bennett family come over. As usual, my sister-in-law and I get wrapped up in heavy conversation about cooking, growing veggies, sewing and so much more. I simply adore her — she is such an inspiration.

Such an inspiration in fact that I could hardly wait to try a bread recipe that she’s been baking now for quite some time in her dutch oven at home. She made it sound so easy (she doesn’t even measure!) but the basic premise is baking bread at a high heat in the dutch oven as to replicate the “steaming” process that takes place in the higher end ovens found in fancy bakeries.

This loaf of bread you see below was my first attempt — I too did not measure and it came out delicious. But tonight as I sit here typing this, my home smells so Heavenly as I made a second loaf so I could measure my ingredients this time around and share the recipe with you.

From a summer full of adventure to the new season of Fall — it’s been a lot of fun glamping in the Airstream during this season of change. I continue to pick apples off my heirloom trees after my early morning walks through the quiet town of Roslyn with Oliver. It’s a sweet ritual I have come to adore and really look forward to.

While cleaning/organizing the storage in my Airstream last weekend, I happened upon my beloved pressure cooker. It was good timing too as sitting in my fridge were some beautiful beef short ribs I was planning on braising away in the Airstream kitchen for a few hours for dinner that evening. Thankfully with the pressure cooker it not only cut down the timing of braising by more than half, it also produced some of the most deliciously flavored short ribs I have had in a long time. In less than one hour I was able to serve up those fall-off-the-bone beauties atop a bed of fluffy sweet potatoes. I will admit, I was little upset with myself that I had forgotten about my pressure cooker. It truly is a time (and propane!) saver in the silver kitchen. Continue reading »

There is something about the Fall season that simply warms my heart and gets me thinking about the cooler weather ahead.

Our Airstream, which currently happily waits for us on our piece of property in Eastern Washington sits amongst heirloom apple and plum trees surrounded by this new season.

And it never fails — with the abundance of those late summer fruits — apples and plums — that I’m continually tempted into my silver kitchen to cook . . .

. . . and to escape the everyday hustle and bustle of corporate America.

The drive from Ketchum, Idaho to Jackson Hole, Wyoming was quite a long drive, but pleasant. We enjoyed the big skies and puffy clouds as well as landscapes that seemed to go on forever. Located right in between Challis, ID and Stanley, ID — along the Salmon River off Hwy 75 is where you will find one of the most picturesque campgrounds ever. It’s called the “Salmon River Campground,” and we could hardly believe our eyes at the sites here. They are all big and spacious sites but best of all, they are located along the Salmon River. Right there! If you love fishing or just relaxing by a river — this is the place for you. Continue reading »

Four months ago we began planning our “Rockin’ the Rockies” Airstream road trip and finally, here we were, at the very beginning.

The Bitterroot Beginning.

We found ourselves at the “Angler’s Roost” campground in Hamilton, Montana tucked along the Bitterroot River. We softly landed in site #19 after a full day of driving from Seattle. Daylight was still ours for a bit so we settled in and took time to relax.

I kept thinking to myself “three weeks away from corporate America,” and those words, in and of themselves made me feel very happy.
